STATEN ISLAND, N.Y. — Taco Tuesdays take on a new dimension this summer on Staten Island. Pastry chef Joseph Settepani offers a sweet rendition of the weekly pop-up ritual at Bruno’s NYC Bakery in Dongan Hills — a white- or dark chocolate-dipped crunchy waffle cookie wrapped around creamy gelato.
The dessert, dubbed “Valle di Gelato” or “Valley of Gelato,” comes cestino-style aka “in a wafer.” Offered for a limited time, Settepani will create different flavor combinations each Tuesday through the early fall, beginning Tuesday, Aug. 9. They are $4.50 each.
The premiere Valle di Gelato flavor to debut from Bruno’s Gelato Artigianale line of cool stuff is “Stracciatella.” That name normally is associated with the scratch-like curds inside burrata cheese. But this usage of the word refers to shards of 60% dark chocolate sprinkled throughout vanilla cream. The creation is partially enveloped in Cacao Berry-brand chocolate and studded with toasted granulated almonds.

A second “taco” includes pistachio gelato churned with Sicilian pistachios and sour cherries. The whole frozen shebang is dunked in white chocolate, then topped with carefully appointed toasted pistachios.
Sicilian-blooded Settepani was inspired by his Mexican-born wife, Daniella, for such an invention.
“We blended the two culinary backgrounds into one item and wanted to pick one day a week to showcase it,” said Settepani.
The pair recently met sweet success when they test drove the tacos at a birthday party for their daughter.
Settepani said, “If you try anything on children and they love it, it’s going to be received well by adults.”
